The Vaello 38cm Polished Steel Paella Pan is an authentic culinary vessel manufactured in Valencia, Spain. This pan is constructed from hand-polished, cold-laminated steel (carbon steel), the industry-standard material for traditional paella preparation. Carbon steel is preferred by professional chefs for its exceptional thermal conductivity and rapid response to heat adjustments, which are critical for developing the socarrat—the prized caramelised rice crust. The pan features a traditional dish base to facilitate oil collection in the centre and is fitted with heavy-duty riveted handles for maximum structural integrity.

Technical Maintenance & Care

As a high-carbon steel product without a synthetic coating, this pan requires specific protocols to prevent oxidation (rust):
Commissioning: Before the first use, the pan must be boiled with water and then scrubbed with detergent to remove the manufacturer’s protective lacquer.
Post-Use Protocol: After each use, hand wash the pan immediately. Never allow the pan to air-dry.
Oxidation Prevention: Once thoroughly dried, apply a thin layer of food-grade vegetable oil to the entire surface (interior and exterior) using a paper towel.
Storage: Store in a dry environment. For long-term protection, it is recommended to keep the oiled pan inside a plastic bag.
